Recipe for Quick Sauteed Potatoes



There is nothing fancy about this recipe.  But it is quick and full of good simple flavors.  Just the ticket when you want a starchy side dish in a hurry.

Makes 4 servings, each approximately 172 calories, 5.4 grams fat, 29 grams carbs, 4 grams fiber, 3.5 grams protein, 5 WW Points+



Ingredients:
3 cups small red potatoes, diced
1 cup sweet onion diced
1 cup red bell pepper diced
1 ½ TBSP olive oil
Salt and pepper to taste
2 TBSP chopped fresh basil, or other fresh herb for serving

Method:
Sauté peppers, potatoes, and onions in olive oil on med-high for 3 minutes to soften.


Add 2/3-3/4 cup water (to just barely cover).  Simmer over medium for about 10-12 minutes until water is absorbed, stirring occasionally, add more water if potatoes aren’t quite soft-you don’t want them mushy though.  



Serve with chopped fresh basil and salt and pepper to taste.
