Recipe for Olive and Feta Turkey Burgers

Last year, I made some Greek salad bison burgers that turned out great.  This recipe is similar but made with lean ground turkey.  These also turned out "really tasty" according to Mr. ELEB.  I would agree!

Recipe for Stuffed Turkey Burgers with Goat's Cheese and Roasted Red Peppers

We love stuffed turkey burgers so I'm always trying to come up with a new "surprise" for the stuffing.  The answer is often as simple as what is in the fridge and pantry.  This week, goat's cheese and a jar of roasted red peppers.

Recipe for Salsa Turkey Pasta

Mr. ELEB is training for a half marathon and wanted a bit more carbs in some of our meals.  We both like whole grain pasta so I created another baked pasta recipe inspired by my December Secret Recipe Club recipe.

Recipe for Blue Cheese, Pistachio, and Cranberry Turkey Burgers

It's only been a week since Turkey Day, I know.  Trust me, these turkey burgers pumped up with tangy blue cheese, salty pistachios and dried cranberries are worth a trip back to the turkey case at your grocery store. Or are you like me and always keep a package of ground turkey breast in the freezer?

Recipe for Ground Turkey, Black Beans and Rice Mexican Casserole

Staring at a package of ground turkey breast, I was pretty uninspired...until I remembered reading about a chicken and black bean casserole Jenny recently posted on her blog, Picky Palate.  I love food bloggers!  I changed things up a pretty good bit and loved the results.

Recipe for Inside Out Turkey Cheeseburgers

It was burger night and I had ground turkey breast defrosted.  I rotate between turkey breast, bison, and Maui Cattle Company beef for our burgers.  It was one of those afternoons where the dinner hour was rapidly approaching; I had already had a glass of wine, and had zero inspiration for dinner.  Luckily for me, Mr. ELEB eats anything I put in front of him and with a smile and usually a compliment for the chef.   Luckily for both of us, these turned out really yummy, so we both were happy at the end of the day!  I mean, look at that gooey cheese, would you?

Recipe for Turkey and Bean Nacho Casserole

Recipes from Cooking Light rarely disappoint me.  This one, meh.   I adapted it by using ground turkey breast rather than vegetarian crumbles as in the original recipe and made a few other minor tweaks.   It was tasty enough but I would just make it like traditional nachos if I make it again.  All the building of the casserole wasn’t worth it and it didn’t keep well for leftovers (soggy chips).  If I had just made it like nachos, I could have saved the leftover meat mixture and served it on fresh chips the next day.  Lesson learned!

Recipe for Turkey Broccoli Bake

I don’t seem to do a lot of casseroles, but this Turkey Broccoli Bake will be in the regular rotation going forward.  It was born, as so many recipes are, from necessity-what I had on hand and a determination not to go to the grocery store.

This casserole is rich and cheesy without being too high in fat or calories.  Mr. ELEB gave it two thumbs up.  Give it a try and let me know what you think.  I served it with brown rice.

Somewhat Southern Stuffed Collard Greens

I mentioned last week about my weekly produce delivery from Kula Fields.  This past week featured some big leafy things-and despite growing up in the South, I had no idea what they were!  Fortunately, there is always a list to refer to!  Viola! Collard Greens.

Ooooooooookay, now what?  My friend Jennifer suggested using the greens like cabbage and stuffing them.  Sounds good to me, I know I wouldn't enjoy them cooked to death with ham hocks and vinegar, served with black eyed peas, as I'd known them as a kid (known of them, not eaten them!).  Next, what's in the freezer and pantry for stuffing? Ground turkey breast-that will work; brown rice-good South Beach grain; ingredients for basic tomato sauce-good; red bell peppers-mmmm, love them; onion-good.  Well, looks like stuffed collard greens are on the menu!
