Recipe for Inside Out Turkey Cheeseburgers



It was burger night and I had ground turkey breast defrosted.  I rotate between turkey breast, bison, and Maui Cattle Company beef for our burgers.  It was one of those afternoons where the dinner hour was rapidly approaching; I had already had a glass of wine, and had zero inspiration for dinner.  Luckily for me, Mr. ELEB eats anything I put in front of him and with a smile and usually a compliment for the chef.   Luckily for both of us, these turned out really yummy, so we both were happy at the end of the day!  I mean, look at that gooey cheese, would you?



Makes 3 burgers, each approximately  217 calories, 6.5 grams fat, 0 grams carbs, 0 grams fiber, 40 grams protein,  5 WW Points+ (plus bun and/or condiments)

Ingredients:
1 lb ground turkey breast
1 ½ oz. extra-sharp cheddar cheese, divided
1 tsp canola oil
Salt and pepper
Condiments, buns or lettuce leaves for serving

Method:
Divide turkey breast meat into 6 equal balls and cheese into 3 equal portions.   

Place cheese between two balls of turkey meat and gently form burger around cheese.  Repeat to form two additional burgers.  Season with salt and pepper.


Heat oil in skillet over med-high heat and add burgers.  Cook 3 ½ minutes on each side, total 7 minutes.  Serve while hot with buns if desired, or wrapped in lettuce leaves, and condiments.


These would probably do OK on the grill too, but Mr. ELEB had the night off so it was into the pan for tonight!
