Slow Cooker Shredded Barbeque Chicken for a Crowd


The slow cooker is a treat to have when preparing food for a large crowd.  My slow cooker is quite the beast so it came in handy last week when we hosted a crowd to watch the final round of the Master's.  In honor of the Master's I served some Southern inspired dishes.  Here's one.
 

Ingredients, serves 25+ people so scale up or down as needed:
4 lbs boneless, skinless chicken thighs, trimmed of all visible fat
4 lbs boneless, skinless chicken breasts, trimmed of all visible fat
2 large sweet onions (Maui onion, Vidalia etc), cut into slices about ¼ inch thick
3 cups +/- barbeque sauce, divided

Method:
Put onion slices in bottom of slow cooker.

Layer chicken and 1 ½ cups sauce ending with sauce.


Cook on high for 1 hour and low for 6 hours.
Remove chicken and onions; allow to cool.  Discard liquid in slow cooker.
Using 2 forks, shred chicken and mix in with onions.

Mix chicken, onions and up to 1 ½ cups warmed remaining barbeque sauce, until you get to the consistency you like. Return to the slow cooker on "warm" cycle for serving.

Serve with whole grain buns and additional barbeque sauce on the side.
