Before I made this recipe I thought "no way can brown rice make a creamy yummy risotto." Guess what? I still feel that way. However, this rice dish was tasty and I was happy with all the veggies and the good nutrition in the recipe and that it was under 250 calories per serving.

Recipe for Mushroom Lasagna-Meatless Monday
This should really be a "Meatless Sunday" or "Meatless Day Off" recipe, it took much longer than I had anticipated. I don't know if it was just an off day for me or what but I can usually multi-task my way through most any recipe in no time. This one took a while and felt very sequential. Don't get me wrong, it is fabulous and well worth the work required but I'd hesitate to recommend it for a work night meal.

Recipe for Red Wine and Garlic Portabellas Over Whole Wheat English Muffins
When we had friends visiting recently, I pulled a bunch of stuff out of the fridge for a pot luck lunch. I had some portabellas that needed to be used and came up with this recipe. Everyone loved it and insisted I write it up for the blog, so here you go! This is a rich and filling veggie dish that works for lunch or dinner. I’m also going to try the mushies on top of whole wheat pizza sometime.

Recipe for Mushroom Rice
What’s the best clue that you’ve developed a winner recipe? To me, it’s when friends ask me to bring that dish to a potluck or party. My friend Jennifer’s birthday dinner was coming up and her hubby, Ryan, asked me to bring “your rice and mushroom dish.”
The nice thing about this side dish is that you can serve it hot or room temp so it works for dinner or for a potluck where you might not be able to warm it up (picnic etc). It does keep well covered in a low (200 degree) oven for up to an hour or so if needed.
Bringing a side dish with wild and brown rice gives people a healthier alternative to heavier potato or starch dishes. The mushrooms make it earthy and flavorful. If you don’t want to deal with the shiitakes, using all button mushrooms works just fine.

Chicken, (or leftover Turkey?) Corn with Chiles, and Mushroom Quesadillas
Do you still have turkey leftover from Thanksgiving? Substitute turkey for the chicken in this easy recipe.
I hate wasting food so sometimes a lot of bits and pieces accumulate in the freezer and fridge. On Wednesdays I get my produce delivery so I try to clean out the fridge before it arrives in the evening which often means Wednesday’s dinner is leftovers.

Pizza Night

I love having my whole wheat pizza dough ready to be pulled from the freezer for pizza night. The only request from the hubby regarding toppings for tonight's pizza was for "mushrooms" so I started there-I had some buttons and shiitakes in the fridge. Also there was some nice turkey Italian sausage in the freezer, so that came out and into the fridge last night with the dough ball.
