Recipe for Stuffed Turkey Burgers with Goat's Cheese and Roasted Red Peppers

We love stuffed turkey burgers so I'm always trying to come up with a new "surprise" for the stuffing.  The answer is often as simple as what is in the fridge and pantry.  This week, goat's cheese and a jar of roasted red peppers.

Recipe for Light Version of King Ranch Casserole



Maybe this should be called "Princess Ranch Casserole" because it is probably less than half the fat and calories of the classic recipe.  No canned soups, full fat milk, or sour cream, and a modest amount of low fat cheese.  Still delicious though!

Recipe for Chicken with Roasted Red Pepper Sauce




Kalyn’s Kitchen was one of the first food blogs I started reading on a regular basis.  Kalyn has great healthy and flavorful recipes which tend to adhere to the South Beach Diet principles.  Even if you aren’t dieting, there are some amazing recipes on the site. 

This chicken recipe uses Kalyn’s recipe for roasted red pepper dip with feta and mint as the sauce for baked chicken thighs (you could also use breasts).  It’s fabulous as a dip and great as a cooking sauce.

Recipe for Quinoa Salad with Roasted Red Pepper, Feta, Mint, and Almonds



Even though it is warm/hot year around here in Maui, there is something about summer that just makes me want fresh, tasty salads.  This quinoa salad is great. Simple to make, yet complex in taste.  It is great as a side dish to grilled meats or alone as a meatless main course option.

Mr. ELEB asked for "something light" for dinner the other night.  We're both doing pretty good with our diet and exercise plan after the excesses of the recent trip and this meal, adapted from a Mark Bittman recipe, hit the spot.

Recipe for Poached Eggs over Spinach and Salmon with Pureed Roasted Red Peppers


If you read yesterday's blog post, you know we had breakfast for dinner last night using the pureed roasted red peppers I made.  This would of course also work for brunch or a morning breakfast.  Eggs, salmon, spinach, red peppers, a little dill and a squeeze of lemon-yum!  I had mine just on the bed of spinach and found it very filling.  For Mr. ELEB, I piled his on top of toasted whole wheat English muffin halves. Good either way!

Recipe for Pureed Roasted Red Peppers


A large bag of red peppers have been sitting in my fridge for a few days now.  When I saw Kalyn's Roasted Red Pepper Dip with Feta and Mint, I was inspired to roast a few (and threw the rest in the freezer-I'll let ya' know how that turns out).  On the menu is breakfast for dinner, poached eggs over spinach and salmon (I'll write it up and post it) and I don't want to do a Hollandaise sauce.  I'm going to use pureed roasted red peppers, instead.

Friday Night Fajitas

Do you have a "go to" recipe?  One that you know will never fail you, that you can pull together flawlessly when its the end of the work week, you're tired, cranky, or just not that into cooking that night?  My recipe for chicken fajitas fills that bill for me.  I've been making them for years and they always turn out great, good for just the 2 of us with leftovers (you know I love to cook once and eat twice, or more!) and much appreciated by company.

When we moved to Maui, I couldn't find the Mexican Seasoning I had been using forever.  I was not going to give up my "go to" meal and asked several of my mainland friends as well as my Mom to send me some of the seasoning.  No one could find it so I guess it's no longer made.  I experimented with some different taco, Mexican, and fajita seasonings and am currently using a brand name taco seasoning with 10 calories/TBSP.

Somewhat Southern Stuffed Collard Greens

I mentioned last week about my weekly produce delivery from Kula Fields.  This past week featured some big leafy things-and despite growing up in the South, I had no idea what they were!  Fortunately, there is always a list to refer to!  Viola! Collard Greens.


Ooooooooookay, now what?  My friend Jennifer suggested using the greens like cabbage and stuffing them.  Sounds good to me, I know I wouldn't enjoy them cooked to death with ham hocks and vinegar, served with black eyed peas, as I'd known them as a kid (known of them, not eaten them!).  Next, what's in the freezer and pantry for stuffing? Ground turkey breast-that will work; brown rice-good South Beach grain; ingredients for basic tomato sauce-good; red bell peppers-mmmm, love them; onion-good.  Well, looks like stuffed collard greens are on the menu!
