Do you remember growing up that there were several recipes that your Mom, Grandma, Aunt, or friend's Mom used to make all the time? The perennial favorites, they showed up in Junior League Cookbooks, at potlucks, or church suppers. I think we know more about nutrition now but back in the day, many of these weren't exactly "clean eating" or "whole food". This is one of those for me, a sweet chicken recipe that I've tried to make a little healthier.

Recipe for Slow Cooker Indian Spiced Lentils and Chicken
I haven't used my slow cooker for a while but it's been hectic lately, catching up from my trip back to Atlanta to meet Miss E. (my first grandchild) and planning for our upcoming vacation (Ireland, Scotland, and England). So, a perfect time to pull it out. I love plopping all the ingredients in the crock, turning it on and not thinking about it until it is time to serve. Continuing on my Indian flavors kick, this comfort food recipe hit the spot.

Recipe for Slow Cooker Steak Sammies
Here's another good recipe from A Year of Slow Cooking. I'm all in to quick and easy these days and this recipe hits all its marks. Two ingredients in the slow cooker (plus salt and pepper); seven hours later-a flavorful, aromatic, tender pile of beef and peppers just waiting to be plopped on some healthy whole wheat buns with some provolone or pepper Jack cheese. Yummy!

The slow cooker is a treat to have when preparing food for a large crowd. My slow cooker is quite the beast so it came in handy last week when we hosted a crowd to watch the final round of the Master's. In honor of the Master's I served some Southern inspired dishes. Here's one.

Recipe for Slow Cooker Buffalo Chicken
Do you ever wonder how people's recipes come about? Well for this one I'll satisfy your curiosity. I bought a bottle of buffalo chicken hot sauce ages ago intending to make some buffalo chicken for pizza. And recently I read on Cara’s Cravings how to modify a large slow cooker to make smaller quantities. Mine is a massive beast which always means plenty of leftovers for the freezer. Cara has the same issue I have: sometimes you just want to make smaller quantities. So she came up with this ingenious method of using a smaller ceramic container with a lid INSIDE the larger slow cooker for those times. (She also has a great sounding Buffalo Chicken recipe but I just went simple-chicken, onion, and sauce). I never made the pizza (we ate all the chicken!) but I think this would be good on a pizza but I'm sure you'll see that on Eat Little, Eat Big one day.

Recipe for Slow Cooker Pork Verde
We had a hankering recently for Mexican but wanted something different than our “go to” of chicken fajitas, and pork shoulder roasts were on sale. A popular recipe that was floating around during my South Beach days was Chicken Escondido, a delicious chicken cooked on the stove top in salsa verde, tomatoes and black beans. So I thought I’d use some of the components of that recipe in the slow cooker with the pork. I’ve never cooked a pork shoulder roast in the slow cooker but have read lots about how tender and flavorful the meat is so I thought I’d give it a try. Muy bueno!

Recipe for NCLS Beef and Veggie Slow Cooker Stew
Last week, the SF Giants were contending for the National League Championship Series title. They won! And on to the World Series they went...long time coming. I put this pot of healthy and delicious beef and veggie stew on in the morning and took it over to our friends house that evening where we all cheered on the Giants. Was it our cheering? The stew? Not sure, but they did win, so I'm honoring that in the title for this easy crock pot recipe.

Company's Coming Slow Cooker Pot Roast
I recently purchased a slow cooker after seeing tons of healthy slow cooker meals that I knew we’d enjoy. Plus, I like cooking once and eating twice-leftovers!
When the slow cooker showed up, my hubby surprised me by asking if I could do pot roast in it. He lived in California for a long time, but I guess you can’t take the mid-west out of him completely. Pot roast is a meal I haven’t cooked in a long time! Our good friends were coming over with the wife’s mom for dinner, and tri-tip roasts were on sale so I thought it would be a perfect opportunity to do pot roast and mashed potatoes.
