Recipe for Quick and Tasty Broccoli Soup-Meatless Monday
What do you do when you have some sad looking veggies in the fridge? Make soup of course! I based this soup on the success I had with asparagus soup made from the discarded stems. Super quick and easy, and with a chunk of crusty homemade bread, a perfect meatless Monday light supper.

Recipe for Quick Broccoli Slaw
This is so quick, easy and tasty it should be in everyone's recipe file. I have a wonderful recipe for a broccoli salad (I'll share next time I make it) but it is a bit labor intensive, not something you can throw together in a hurry. Like when you have people coming over for dinner in an hour. And you are driving home and realize you forgot to think about a side dish/salad when you were excitedly throwing the ingredients for slow cooker steak sammies into the crock that morning. And you don't have anything resembling a vegetable in the fridge. And you haven't showered yet... Okay, you get the picture. When this happens to you, run to the nearest store and pick up these four ingredients to throw together a very satisfying Quick Broccoli Slaw.

Recipe for Mediterranean Crunch Salad
Here’s a healthy and hearty salad that serves a crowd. It is modified slightly from a Whole Foods recipe. I used chard instead of kale and made a basil-feta dressing instead of just dressing it with red wine vinegar. It definitely needs the dressing for my tastes. This keeps well for several days in the fridge.

Recipe for Turkey Broccoli Bake
I don’t seem to do a lot of casseroles, but this Turkey Broccoli Bake will be in the regular rotation going forward. It was born, as so many recipes are, from necessity-what I had on hand and a determination not to go to the grocery store.
This casserole is rich and cheesy without being too high in fat or calories. Mr. ELEB gave it two thumbs up. Give it a try and let me know what you think. I served it with brown rice.

Recipe for Roasted Broccoli con Pomodoro
Why roasted broccoli? Do you ever get in a rut with what you're cooking? I do. With our weekly veggie delivery and a conscious effort to get more veggies in our diet, I've gotten in the habit of steaming almost everything. Which in and of itself isn't bad. Steaming is one of the best ways to keep calories down and retain the most nutrients. But, it gets boring!
So...I've been trying to branch out and tonight I put together a simple but very tasty Italian flavored dish. The flavor of the roasted broccoli is amazingly complex, intense, and almost sweet. The addition of garlic, tomato, and a small amount of good cheese creates a perfect dish!
I'm committed to trying to be more creative with my veggies. How about you?
