Recipe for Homemade Southwestern Chicken Pot Pie-Secret Recipe Club


This recipe is courtesy of Lynne at Café Lynnylumy SecretRecipe Club assignment for February.  Lynne is a photographer and lives in Savannah, Georgia.  She attended school at the University of Georgia.  I think I was meant to have Lynne’s blog as I also attended the University of Georgia and lived just south of Savannah on St. Simons Island growing up-my Mom, brother, and niece all live there still.  Small world, huh?

Recipe for Boeuf Bourguignon-Daring Cooks


I'll admit it.  When I first read through this month's Daring Cooks challenge, I thought "is all that really necessary for a beef stew?"  Well, maybe not necessary but definitely worth it-I'd say this is the best beef stew I've ever made!  Our May 2012 Daring Cooks' hostess was Fabi of fabsfood.  Fabi challenged us to make Boeuf Bourguignon, a classic French stew originating from the Burgundy region of France.


Oh, and did I mention it is a Julia Child's recipe, from Mastering the Art of French Cooking?

Recipe for Moussaka-Secret Recipe Club



Moussaka-something I love ordering in restaurants but have failed miserably the few times I've tried to make it. Not this time!  Thanks to Evelyne at Cheap Ethnic Eatz, I now have a great recipe.  Evelyne's blog was my March Secret Recipe Club assignment.  It is a nice experience each month to really spend some dedicated time on a fellow bloggers site.  You can read more and see all of this months recipes on the Secret Recipe Club site.

Recipe for Ground Turkey, Black Beans and Rice Mexican Casserole







Staring at a package of ground turkey breast, I was pretty uninspired...until I remembered reading about a chicken and black bean casserole Jenny recently posted on her blog, Picky Palate.  I love food bloggers!  I changed things up a pretty good bit and loved the results.

Recipe for Pimiento Mac-N-Cheese




I wanted to do something with pimiento cheese as part of the Master’s party we threw last week (if you aren’t Master’s followers, pimiento cheese sandwiches are a major food draw at the golf course).  I knew the other ladies were bringing pretty healthy stuff so I figured I could splurge a bit and do a mac-n-cheese.  Plus a lot of the guys generally don’t get too much in the way of carbs at home (don’t feel too sorry for them, they eat plenty well!).   Well, the March edition of bon appétit (which, par for the course, arrived here on Maui in early April, just in time for the party) featured a yummy looking mac-n-cheese on their cover, made with pimiento cheese, so I was “good to go”.

Recipe for Turkey Broccoli Bake


I don’t seem to do a lot of casseroles, but this Turkey Broccoli Bake will be in the regular rotation going forward.  It was born, as so many recipes are, from necessity-what I had on hand and a determination not to go to the grocery store.

This casserole is rich and cheesy without being too high in fat or calories.  Mr. ELEB gave it two thumbs up.  Give it a try and let me know what you think.  I served it with brown rice.
