Recipe for Pepperoni Portabella Pizza


Here’s a tasty and satisfying idea for a quick lunch that comes in under 250 calories.  

Makes 1 serving; approximately 239 calories, 14 grams fat, 16 grams carbs, 2.5 grams fiber, 15 grams protein;  7 WW Points+

Ingredients:
1 Portabella cap, degilled  (see my video for instructions)
¼ cup Italian salad dressing
3 TBSP pasta sauce
2 TBSP chopped shallots (or onion)
2 TBSP chopped red pepper
2 TBSP shredded low fat mozzarella cheese
1 TBSP Italian seasoning
5 slices of turkey pepperoni
TBSP chopped cilantro or other fresh herb for serving

Soak the mushroom cap in dressing while oven heats to 375 degrees. 
Remove mushroom and shake excess dressing off.
Place on baking sheet lined with mat, foil or parchment.  Top with sauce, veggies, cheese, seasoning and pepperoni. 



Bake for 20 minutes or until cheese has melted and sauce is bubbling.  Remove; let cool briefly and serve with sprinkled herbs.


Easy!  And another way to get some veggie servings in during the day.
