Recipe for Strawberry Chocolate Oat Smoothie




It is widely accepted that oats help lower cholesterol. High cholesterol runs in my family and mine has been up over acceptable levels in the past so I usually have oats as part of my breakfast several times a week.  I love overnight oatmeal but sometimes I want something different.  Could I incorporate oats into a smoothie? Why yes, yes I can!  And you can too.

Recipe for Post-Bike Ride Shake




One of the reasons Mr. ELEB and I moved to Maui was to be outside all year round with the hope of continuing to stay active and fit as we get older.  I'll admit, although we do pretty good, we don't exercise as much as we should or could.   Between running (for him), biking (both of us), golf (both), swimming (both), walking (me), and weights (me), we get more exercise than we would living on the mainland so I shouldn't go on about it.  What I will go on about is my post workout routine.

Recipe for Pineapple-Blueberry Smoothie Made with Coconut Water


There is also flax seed and egg white in this concoction I made up this morning but including that in the title made it too long!  This is a new twist for me-using coconut water in my smoothies instead of soy milk and non-fat Greek yogurt. 

I wanted to lighten up the calorie load and still make a nutritious smoothie.  The coconut water is low calorie, no fat, no added sugar, and contains 5 essential electrolytes (more potassium than a banana).  The egg white adds some protein, and the flax seed contributes important Omega-3s and fiber.

And the good news-it was tasty and satisfying and filling!

Makes 2 servings, each approximately 141 calories, 2.5 grams fat, 23 grams carbs, 4 grams fiber, 8 grams protein, 4 WW Points+

Ingredients:
1 cup fresh pineapple chunks
½ cup fresh blueberries
1 cup coconut water
2 TBSP ground flax seed
½ cup egg whites

Method:
Add all ingredients to blender and process until smooth.  Drink right away or let sit until it thickens to your preference.
