Recipe for Caraway Cabbage and Carrot Slaw


I saw a recipe recently for coleslaw that included caraway seeds.  I had a large bag of shredded cabbage and a fresh jar of caraway seeds and pulled this slaw together on a whim.  I like the added flavor from the caraway seeds.  I think toasting seeds and grains always ups the flavor so I toasted the caraway.  I also prefer cabbage very slightly wilted over raw.  Super easy, quick and tasty side dish.

Makes 4 servings, approximately 35 calories, 0.3 grams fat, 7.5 grams carbs, 2.2 grams fiber, 1.9 grams protein, 1 WW Points+

Recipe for Microwaved Egg White Breakfast Treat


This is sooooooo easy, very quick to make and tasty.  Inspired by Danica’s fluffy microwaved egg whites, this breakfast treat is high in protein, low in fat and calories and very filling.  Use veggies and other lean meats for variety.  Pair it with toasted whole grain bread, english muffin, or, as I do, overnight oatmeal.  No excuse for not getting a good start to the day with this quick and easy breakfast!

Makes 1 Breakfast Treat, approximately 57 calories, 2 grams fat, .7 grams carbs, 0 fiber, 10.4 grams protein, 2 WW Points+

Recipe for Sunset Potato Salad

HAPPY TURKEY DAY!

I hope you are having (or had) a great Thanksgiving.

When my kids (adult) were here from GA visiting us recently, we wanted to do a sunset picnic with them and some of our friends.  The sunsets here are amazing as you can imagine.  Heck, don’t imagine, here is a picture from that night! 

I wanted to do some tasty and easy sides that would hold up in the Maui weather.  Even though it is winter, the temps at sunset are still in the low 80’s.  My kids have hearty appetites so a potato salad was a good, filling option.  I concocted this recipe to avoid worrying about mayonnaise going bad.  Boy did it turn out flavorful!  It is also low calorie and low fat (assuming you eat a regular portion size!)

You could play around with the heat level if you wanted to but I loved the mild flavor of the chiles and the tang of the lime just as it turned out.  This makes a huge amount so you can definitely cut the quantities down if you're not feeding a crowd.

Lighten Up Pumpkin Muffins


I like to have lazy Sunday mornings reading the paper and drinking coffee (who doesn't?!).  A few weekends ago, I came across a recipe for "Skinny Pumpkin Muffins" in Parade Magazine in our local island paper.  Since the transitions between seasons are very subtle here on Maui, Pumpkin Muffins sounded like just the thing to help get us in the "Fall" mood.  I have been looking for pumpkin puree for 3 weeks (not that unusual-"gotta wait for the boat") so when I found some today, I grabbed a few cans and promptly came home and made these muffins.
