Recipe for Simple Roasted Potatoes


Potatoes get a bad rap.  Sure, if you load them up with butter, sour cream, cheese etc the calorie count will add up.  But a small serving of potatoes, flavored with herbs and cooked with some healthy olive oil can definitely be part of a well balanced diet.  Potatoes are naturally low in sugar (1.6 grams in a small potato), provide a decent amount of vitamin C (22% of daily requirement), and although they are a starchy vegetable, one provides a modest 10% of daily carb requirements plus some fiber.  And they have Omega-3 and -6 fatty acids.  So don't eliminate potatoes from your diet! 

In this simple recipe, I've used the Pure Olive Oil from Crisco that I received as part of the Foodbuzz Tastemakers Program.  I roasted the potatoes just until they were barely starting to brown.  We also like them roasted to a crackly crunch, achieved by simply leaving them in the oven longer.

Makes 2 servings, each approximately 132 calories, 6.8 grams fat, 16.4 grams carbs, 2.1 grams fiber, 1.9 grams protein; 4 WW Points+

Ingredients:
1 1/2 cups red potatoes, cut in approximately 1 x 1 inch pieces
1 TBSP olive oil
1 TBSP chopped fresh thyme (or rosemary)
Salt and pepper

Method:
Preheat oven to 425 degrees.  Toss potatoes with oil, thyme, salt and pepper and spread in baking pan.

Roast for 20-30 minutes, until desired degree of crispness is achieved.
